Nitrites

More than two years ago, journalist Guillaume Coudray sounded the alarm about nitrites and nitrates in processed meat. These highly carcinogenic components are present in more than 80% of pork-based products: ham, roast meat, sausages, chorizo and so on.

It is easy to notice on cooked ham because it is pink rather than white. For other products, you need to check the ingredients list.

Some brands, such as Herta, now communicate about products without nitrites.

Since 2026, the French government has asked manufacturers to use less because it is carcinogenic... Why not simply ask them to stop using it altogether?!?!
